Dr. Wine Poblacion, Makati: A Rooftop Start to the Night
Dr. Wine Rooftop is an open-air rooftop in Poblacion, Makati for wine and sangria, and it runs to 1am or 2am. Use it as the first stop of the night: a glass on the roof while it is still light, dinner in the neighbourhood after, and bars only if the evening asks for them.
The rooftop

Go for the open air and the wine rather than a particular view, and ask the staff what they are pouring.
Why go first
The weather. An open-air roof is the one stop in Poblacion that rain can cancel. Early in the evening you can see what the sky is doing and still change the plan.
The light. A roof at dusk is pleasant without any view to carry it, and wine before dinner is a gentler start than cocktails after it.
The hour. Poblacion runs later than anywhere else in Makati, with bars open until between 2am and 4am. The early evening is its unhurried end. Later, the same streets are in the middle of a crawl.
The bill. This is the priciest of the Poblacion bars. One glass each at the start, then dinner at a mid-range table, keeps the night closer to the ₱800 to ₱2,000 a head that Poblacion usually costs.
Dinner after
Come down and eat in the neighbourhood.

- Scratch Smashburgers: smashburgers on brioche buns, for something quick.

If the night continues
After dinner there are three directions.
Slow the pace. The Spirits Library at 4963 Guerrero is a cocktail bar with vintage bottles, No. 98 on the Asia's Best Bars 2026 extended list.
Add music. OTO at 5883 Enriquez is a listening bar with vinyl, DJ sets and cocktails. It closes at 1am.
Go back up. The roof runs to 1am or 2am, so returning for a last glass of sangria is possible if the weather has held.

If it rains
Have the swap ready before leaving home. Bibio is a Poblacion wine bar pouring natural wine. It is indoors and runs ₱500 to ₱1,500 a head, so the rain version of this date is also the cheaper one.
Remember the walk as well. Poblacion is the least rain-proof part of Makati, because the venues are indoors but every hop between them is exposed, on narrow sidewalks. On a wet night, do the wine bar and dinner and stop there.
